I like Chapman's view on Katrina, Where is My God, Where is My Country. I think that it depicts the event very well and actually tells the story of how devastating the event actually was. You could use this in your classroom by having your students use emphasis on the mood of the painting by stressing different colors.
I lesson plan I would have for a class is to have a field trip to a local art exhibit, and have the students explore and have them makes notes of different pieces they found and give guidence to the different areas they can go to.
